After reading books like The Omnivore's Dilemma and Fast Food Nation I became more aware of how our food is made and how it impacts our health and the environment. Until reading Food Matters I didn't know how to put this information into practice. Bittman takes the same minimalist approach he uses to demystify cooking flavorful meals and applies it to making flavorful, healthful, earth-conscious meals. It is a truly doable practical approach to the problem that does not advocate anything radical like cutting out meat and processed foods altogether. It offers tasty alternatives that make it less likely that you will have a hankering for them. (The Root Vegetable Chips are awesome!)
