I wanted to find more recipes that incorporated and highlighted vegetables that my family would enjoy. Despite the very high recommendations, Deborah Madison's book didn't do much for us. I loved Bittman's How to Cook Everything, though, so I thought I'd try this. Bingo. Great options for vegans are included throughout the book, and several variations are given on many of the recipes. Easy to follow, lots of suggestions and tips, and great ideas for meal planning abound. His encouraging tone has me trying things I would not have thought about prior to his coaxing. Highly recommended!
