Dough: Simple Contemporary Breads with DVD by Richard Bertinet
Dough: Simple Contemporary Breads with DVD

Marianne Samuel, July 3, 2010

After reading “Dough” I found out it is the book I was looking for long ago to get over the baking barriers I always had in mind. It actually eliminates the fear of handling sticky unmanageable dough through step by step photos and detailed explanation of the technique which helps in enhancing the performance and avoid usual mistakes; i.e. not only ingredients and recipes. The enclosed DVD is part of the useful introduction which shows how Richard himself handles the dough. The book is divided into 5 chapters with a helpful introduction. The introduction introduces you to the essential baking tools, the common ingredients for almost all kinds of dough and the dough handling methods. The 5 chapters are basically divided into 5 dough kinds; White, Olive, Brown, Rye and Sweet. In each chapter the relevant dough is explained first, followed by the bread types derived from it. There is also couple of supplementary recipes that may be required for stuffing or topping. This makes “Dough” a real helpful book for baking professionals as well as for beginners. Finally I would like to mention that you need to read the introdution and recipe you intend to start with thoroughly before you start, in order to be well prepared, furnished with necessary tools and required space and have developed a sequence of work in mind.
Enjoy baking with Richard.
