I have googled, binged, looked in my local library, but cannot find books with specific instruction on cooking bison or buffalo. Why is there so little information out there in spite of the fact that there are still people who still hunt and eat wild game? And the information you do find is contradictory. Some say to cook it fast at high temperature. Others say say cook at low temp for a shorter time. They all agree it is good for you. Would they all please get on the same page on how to cook it?? When I get an answer I'll buy the book(s) I need.
