Good to Eat: Riddles of Food and Culture

I'm reading this book for a folklore class in food-ways. The main premise Harris puts forth is that we create religious and social strictures based on economic and practical terms first, i.e. India made the cow sacred because the animals are worth more alive than as a source of meat. It's a hard sell in some cases however, and Harris glosses over many sticking points. For example, if Islam outlawed pork meat only because pigs don't do well in desert climates, how do you explain that Indonesia, the largest Muslim country in the world, is a tropical climate where pigs thrive?
Not a very helpful book unless you plan to read other opposing viewpoints to supplement Harris' often outlying ones.
