I had never heard or read much about coconut oil until I read this book. I liked that this was well-referenced, to references in the real scientific literature. The author opens wide the soy scam that big agro has going - I had no idea that "vegetable oil" is, in fact, soybean oil (I always thought it was corn oil). He includes a section of recipes, substituting coconut oil for butter/margarine. Having rediscovered my dairy allergy, I have been using coconut oil in place of butter - on toast, for frying eggs, in baking, and so on. Different brands of coconut oil have different levels of the coconut flavor, and one gets acclimated to the coconut flavor after a while. I have since passed the book along to my mother who is also learning a lot.
