This book not only has wonderful, kitchen-tested recipes but also a great introductory chapter on what ingredients you use, what they are and what they do. It has made it a pleasure to cook good-tasting food which is suitable for a diabetic menu. Not only is it my main cook book but I have bought copies for several family members.
