This is one of the first cookbooks I owned. It helped teach me how to cook. It gives clear explanations of food, how to cook, ways of cooking, why you cook something this way and what ingredients do. The recipes are solid and tasty. It would be the first book I would go to no matter what I am cooking from French to American to Vegetarian to Vegan. It explains things that no other cookbooks would. Well worth every penny. Mine is still with me. It is food stained and battered and no one will ever say "Well, didn't use this one did they" at an Estate sale.
