This is the cookbook I've been looking for without knowing it. I have cooked vegetarian food for years, and have 'used up' the Americanized style of vegetarian cooking found in most cookbooks here. This book progresses through wonderful ingredients that deserve and have gone from the 'exotic' to the 'ordinary'. They are now in their rightful place at the common plant based table. Nutritious and beautiful, savory and not completely reliant on dairy to make them rich....I cant' recommend this book enough for the new to vegetarian cooking, or those who have been at it awhile.
