Then followed 4 years in London and France furthering his training with John Burton Race at L'Ortolan Restaurant, London; Marco Pierre White, The Oakroom, London; Albert Roux, London; and Hotel de Paris, Monaco. In May 2000 he opened his own restaurant, Vue de monde in Melbourne, Victoria.

Vue de monde is recognised as one of the top restaurants in Australia winning many awards.
