Complete Book of Soups and Stews Cover

Synopses & Reviews

Publisher Comments:

Bernard Clayton, Jr.'s, first book, The Complete Book of Breads, won the coveted Tastemaker cookbook award and was praised by Craig Claiborne as perhaps the best book on the subject in the English language. Of Clayton's The Complete Book of Pastry, which also received a Tastemaker award, Claiborne said: "One of the most important cookbooks of this year if not this decade." Now this highly respected author turns his attention to soups and stews.

From his travels around the world, Clayton has put together an eclectic collection of 250 soup recipes and 50 stew recipes, adding to the clear instructions personal anecdotes and historical background throughout. He covers a wide range of soups, from Asparagus-and-Crab to Peach-Buttermilk. American classics such as New England Chowder, Burgoo and U.S. Senate Bean Soup share the spotlight with such international gems as Japanese Shabu-Shabu, Nigerian Peanut Soup and Scottish Cock-a-Leekie Soup. After a thorough discussion of the many kinds of stocks, from Brown Stock to Vegetable Stock, Mr. Clayton includes, for those of us who are lazy, the pros and cons of homemade versus storebought stock, along with tricks and tips to improve the later.

With recipes that are well written and easy to follow, Clayton shows that soup-making is neither time-consuming nor difficult, and in any case is well worth the effort.

About the Author

Bernard Clayton, Jr., is the author of The Complete Book of Breads, which is widely considered the most authoritative work on the subject, the celebrated Breads of France and How to Bake Them in Your Own Kitchen, and The Complete Book of Pastry.

Born in Indiana, the son of an Indiana country newspaper editor, Bernard Clayton worked on the Indianapolis News after Indiana University and then joined Time-Life magazines in New York City. He became Time-Life bureau chief in San Francisco and Honolulu and war correspondent for the magazines during World War II. Later he was vice-president and director of public relations for two major San Francisco-based firms. He then was an editor and writer for Indiana University until 1982, when he left to devote his full time to food writing.

Bernard Clayton has backpacked the length of the two-hundred-mile Muir Trail in the Sierra Nevada Mountains in California and has been oarsman on expeditions by raft and rowboat on the Colorado River, through the Grand Canyon and through Hell's Canyon, on the Snake River. He and his wife, Marie, make their home in Bloomington, Indiana, when they are not on one of the journeys that, so far, have taken them across Europe by bicycle, England by canal boat and Ireland by horse-drawn gypsy wagon. The pursuit of pleasure has always been combined with the pursuit of the perfect bread, the perfect pastry or the perfect soup; far-flung travels through North America, Europe and Asia are reflected in the present volume.
