About the Author

Kim O'Donnel, author of The Meat Lover's Meatless Cookbook, is a trained chef, nationally recognized online food personality and longtime journalist. Shes a graduate of the Institute of Culinary Education and The University of Pennsylvania. She writes a weekly column for USA Today. Formerly of The Washington Post she has also written for Real Simple, Huffington Post, CivilEats.com, True/Slant and Smithsonian.com.

Kim is a regular contributor to Culinate, where she hosts a weekly cooking chat. Kim is the founder of Canning Across America, a collective dedicated to the revival of preserving food. Her latest project is Family Kitchen, a twice-monthly column that appears alternating Wednesdays in USA Today. Kim was a 2009 Duncan Eat-Write fellow at The Writers Colony at Dairy Hollow in Eureka Springs, Arkansas. For those who don't eat meat, the holidays can be daunting: store-bought vegetarian “roasts” don't quite cut it, but what kind of homemade entree can compare to the traditional platter of roast meat? Kim O'Donnel offers a plethora of solutions with “The Meat Lover's Meatless Celebrations.” Whether you or a family member is vegetarian or you're simply trying to consume less of it, or even if you're just looking for alternatives to some of the traditional fare, you are bound to find something appealing here. Instead of marshmallow-laden sweet potato casserole, try Sweet Potato-Pesto Gratin. Eat an Arugula Matzo Lasagna for Passover, and sample O'Donnel's spin on Cherry Pie (with Enlightened Pie Dough) for Independence Day. The recipes sound delicious and the pictures are mouth-watering; many take a little effort to whip up, but the resulting meals are worthwhile. Arranged in a seasonal format, O'Donnel offers suggested menus for different days, but feel free to mix and match too, and most of the recipes can easily hold their own by themselves. If you love to eat, do yourself a favor and pick up this cookbook!
