I recently received this book as a Christmas gift from a friend. As an accomplished professional brewer, I'm well versed in the science and chemistry of brewing beer. I was hoping that this book would help me in planning a cider orchard and answer the question of "What makes a good cider?" This book fails badly in both cases.

This book is only 87 pages long, not counting appendices and index and the author seems overly verbose. He writes with a literary puffery that seems endemic of British "know-it-alls". In this book, he drops 'word bombs', mentioning different techniques and such, but rarely gives more than a cursory explanation. This left me with more questions after reading this book than I had when I started. In example, other than saying that an ideal cider apple is a balance of sugar sweetness, acid and tannins, it leaves any specifics as to suitable varieties out of the book. Granted, the book was published in Britain for (mainly) a British audience, but a page or two, or even an appendix in the back would have helped.

A word of warning for anyone who would use this book. The author perpetuates an insidious myth that sulphites can be used to sanitize equipment. SULPHITES ARE NOT SANITIZERS. For the safety of your precious cider, I suggest you use either household bleach, or any of a number of no-rinse sanitizers available at your local homebrew supply shop.

Instead, might I suggest different book...
