Synopses & Reviews

Publisher Comments:

After selling more than six million cookbooks for both adults and children (including her landmark Moosewood Cookbook, forever changing the way America views healthy eating), Mollie Katzen knows a thing or two about cooking vegetables. And when she's eating at home, preparing dinner for her own family and friends, what vegetable side dishes does Katzen turn to time and time again? Which, of all the thousands of dishes she's cooked, are her favorites?

The answer, The Vegetable Dishes I Can't Live Without, is as varied as Katzen's repertoire:

- Grilled, Filled Endive with Cranberry. Speckled Green Rice

- Tunisian Eggplant with Artichokes & Dried Tomatoes

- The very Best Marinated Vegetable Salad

Whether vegetarians or meat-eaters--or somewhere in between--we all need inspiration when it comes to adding more vegetables to our plate. In this cookbook, you'll find simple, all-new, scrumptious, and healthy dishes, each with that special Katzen twist of technique or ingredient. This delightful book represents a premier chef's lifetime of thinking about the greatest ways to cook vegetables. Written in Katzen's signature hand-lettered style, these are the vegetable recipes she loves the most, and the recipes her millions of fans will most cherish.

Review:

"Like a caring mother, Katzen, in this logical follow-through to her last book, Eat, Drink, and Weigh Less, exhorts readers to eat vegetables. Katzen's methods, though requiring some attention and high-quality ingredients, are low-key enough for novice cooks and maybe even exhausted working moms: 'It is easy to make vegetables taste wonderful through simple preparations utilizing a very few choice ingredients... extra-virgin olive oil, fresh garlic, roasted nut oil, tiny touches of salt and pepper, an herb or two.' This is vintage Moosewood Cookbook Katzen at her poetic best: 'For many palates, dark leafy greens need a soft context... to frame and tame them. Polenta is perfect for this! Consider using some of the more elusive, serious greens, such as dandelion, mustard, or kale.' Katzen offers Tomato-Basil Jam as a ketchup substitute; exoticizes the lowly carrot with flavors of North Africa — cumin, cinnamon, garlic and citrus — or Jamaica, in a coconut-ginger gratin; and will surprise even veteran vegetable mavens with such imaginative dishes as Sauted Fennel with Crispy Fried Lemon. With Katzen's signature hand-lettered text and charmingly homey illustrations, the book will be an inspiration to those who like meat with their vegetables, vegans and vegetarians alike." I am a big fan Molly Katzen's Moosewood cookbook and this new one did not disappoint! Looking through the pages made me very excited to try all of the recipes and she presents very innovative ideas to prepare all the familiar vegetables as well encouraging readers to give some of the less popular vegetables another chance. For example I made the braised brussel sprouts with maple and mustard and everyone (even anti brussel sprouters) loved the dish. I think it is a great book for everyone to try, from vegetarians to those who need to make an effort to try to include more vegetables in their diet.

Excellet cook book for people learning how to cook vegetables, because, as Alice Waters says on the back cover, the method and care of cooking vegetables is what makes them good.

The recipes were not something I couldn't live without. I wasn't pleased with this book at all. In fact this is the first cookbook I ever donated to the library in my entire life. My collection of 500 other cookbooks will testify to that. I hold on to any or all. This one had recipes that didn't suit my taste and were simply too complicated to bother to try. And sadly it also bored me. I was very disappointed. I expected much more of this author.
