Have just tasted the sharp cheddar. Phenomenal. The best vegan cheese I've ever had, hands down.

A Frenchman is eating the Garlic Chive Cream Cheese and says, "It's good! You can't beat that!" A Frenchman!

Seriously, I have only made the above, and the Chipotle Cheese Sauce, but both were great successes. I am moving on to the ones that take longer and the ones that have to age, but I'm feeling very excited by this. It's different than all the other vegan cheese recipes as they require culturing (most try to fake this with flavouring, like lemon).

The book is easy to understand and very well-written.
