This is truly the most comprehensive resource available on making your own cheese. From the most simple ricotta to aged cheeses, it walks you through step by step. Great resource section, too.

This is *the* bible for making cheese at home. In addition to a wide range of recipes there is a lot of information about the history of cheesemaking and the science behind it. The author also runs a wonderful online cheesemaking supply store who delivers promptly!
