She serves as a consultant to health professionals, manufacturers of bestselling alternative flour products, natural-food stores, and associations that help those with special diets. She lives in Colorado.

For all people who need to (or want to) eat Gluten-Free ~ in Carol's book, 'Quick & Easy', is a VERY SIMPLE formula for many of our favourite dishes. When I first used this book, last Christmas, I was given a family recipe for Persimmon Cake. I used Carol's great and EASY formula for my friends cake... and, everyone loved it!! No one knew there was no wheat flour used, and no one missed it!

This book has literally changed our lives. Two people in our family currently suffer with Celiac Disease. My grandchildren may or may not develop this disease. Carol has given mothers, grandmothers, and everyone who cooks and bakes a really simple way of changing from using wheat and gluten flours to using Gluten-Free flours - forever!! And, you can adapt the formulas to your favourite treasured recipes... like my own grandmothers' cookies. Enjoy!!
