Synopses & Reviews

Publisher Comments:

Off-Flavors in Aquaculture discusses types of off-flavors, analytical detection methods for off-flavor compounds, and pre-harvest and post-harvest management practices for preventing and dealing with off-flavor in aquaculture products such as catfish, shellfish, shrimp, tilapia, and trout.

Book News Annotation:

Papers from an April 2002 symposium at the 223rd ACS National Meeting, held in Orlando, Florida, examine a common problem in aquaculture of fish for human consumption. Coverage includes the physiological attributes of cyanobacteria and the environmental conditions that favor their dominance in aquaculture ponds, approaches to control of noxious cyanobacteria using synthetic and naturally occurring compounds and by biological means, and analytical methods for the quantification of off-flavor compounds. The editors are affiliated with the US Department of Agriculture. The book is distributed by Oxford University Press. Annotation (c)2003 Book News, Inc., Portland, OR (booknews.com)

The information on understanding and management of off-flavors desribed in the book will be helpful for us to apply in elimination of off-flavor in pond-raised catfish (P.hypophthalmus). The common off-flavors are widespread problrems occured in catfish culture in Southeast Asia, especially Thailand and Vietnam.
