I borrowed this book from the library, made the first recipe (2 loaves of simple white bread) and it came out so fabulously, that I'm headed into Powells to buy myself a copy for keeps.
It is important to plan ahead when making these breads, as the dough does need to refrigerate and rise for some significant periods of time, but it really is very simple to make the the flavor & texture are excellent. Can't wait to try many of the other recipes.
