I heard the interview of the author on NPR and she clearly loves and knows her meat, and is extremely articulate and entertaining, so I have high hopes for this book (she almost sold me on eating fried pig ears- apparently they're "gooey" and "crunchy"). Going to buy it for a friend who loves, and loves to cook, meat.
