The recipes in this cookbook are exciting in being Basque-inspired, based on seasonal ingredients, and from the inventive mind of a pastry chef. A downside for me is that Goyoaga's cakes, pastries, etc. require combinations of many types of flour. For context, I typically do have many flours on hand (like Buckwheat, Teff, Sorghum, Brown Rice, Tapioca), but even in this case I find it frustrating (even with a baking scale) to have to take out so many for one recipe, particularly when I've followed and enjoyed simpler...and 100% wholegrain...gluten free dessert/baking recipes. The desserts seem to lean on the side of dainty/fine/quite sweet as opposed to hearty/whole-grain, but they are still healthier than the Standard American Diet. Some of the recipes are complicated and have many steps.

My daughter-in-law was recently diagnosed with celiac disease and has had to go totally gluten-free. I've been surfing the web, checking out (and buying) cookbooks, looking for good recipes for me to make for her and for her to make (she & my son both work and they have a 4 year old, so healthy, good and not too labor intensive was important.) Have had some really bad results. Gluten-free is not easy! Then I found this book and it's a treasure! So far, every recipe we've tried has been a hit both with my GF daughter-in-law and the rest of us who don't have to eat this way. I especially love that it's organized seasonally as I shop our local farmers' market and buy fresh ingredients in season. Highly recommend this for anyone who has to or wants to go gluten-free. Also recommend it for the rest of us as the recipes are wonderful!
