This book is so big I've barely made a dent in it but I think I've cooked enough meals from it to give it a fair assessment. 1,000 Vegan Recipes is an astonishing, unprecedented collection of vegan recipes. With lots of great tips and information in addition to the recipes, it could be read like a novel.

Some of the recipes that stuck out for me were the mango avocado spring rolls, potato samosas, spinach and mushroom-artichoke strata, Korean noodle stir-fry, soy-tan dream cutlets, artichoke squares (yum!), and the rosemary scones. Everything was fantastic. The desserts I've tried so far are the chocolate faux silk pie, brownies, carrot cake, and the triple coconut cheesecake. Wow! This book makes me glad I'm vegan. I highly recommend it -- if I could give it more than five stars, I would.

Vegans and vegetarians will appreciate 1,000 Vegan Recipes for the essential go-to recipes and an abundance of fresh ideas. Robertson’s mastery of vegan cuisine, and her careful attention to flavors, really shine through. From Barbecued Tempeh to Ginger Coconut Nice Cream to Kiss My Grits Breakfast Casserole, the recipes are easy-to-follow and they deliver excellent results. I also like this cookbook because it is a great starting-point for anyone who wants or needs to change to their diet. Robertson’s approach is very welcoming and accessible to non-vegans. She makes vegan cooking a celebration, not a deprivation. Whether you are committed to a vegan diet or are looking for a way to spice up meat-free Mondays, 1,000 Vegan Recipes offers delicious recipes for every meal, every season, and every palate. Cook and Enjoy!
