Synopses & Reviews

Synopsis:

A national food magazine editor for years, gifted cook, lecturer, and restaurant consultant, the late Bea Sandler traveled throughout Africa collecting recipes and learning about African eating customs and methods of food preparation. Here are menus for complete meals from 11 African countries: Senegal, the Sudan, Mozambique, the Malagasy Republic, Ethiopia, Kenya, Liberia, South Africa, Morocco, Ghana, and Tanzania. She has devoted a chapter to each country, telling something about the food and serving customs and offering suggestions on how an American might present an African meal with some degree of authenticity and arranged by courses. Illustrations.

Gary Becker, January 5, 2013 (view all comments by Gary Becker)
This book is a real treat for anyone wanting to put an interesting meal on the table to celebrate Africa and its culture. We use it during Kwanzaa and it has been a great hit with the appetizers being the star of the show. The book has several peanut based recipes and uses spices readily available in the states. Interestingly enough it demonstrates how closely dishes have been adopted from the continent worldwide-you can see many dishes already used in many countries with just an addition of this or that. Bea was a great writer and her book is a reflection of her tour throughout. This may be one of the truly great books on African studies and a great addition to any ethnic collection you won't want to miss!
