This is a terrific cookbook! All of the recipes have a nutritional analysis per serving which includes the glycemic index, glycemic load, calories, protein, carbohydrates, fiber, fat, cholesterol, sodium, and diabetic exchanges. Most of the ingredients can be found in our small town grocery store and my family loves the dishes (even the kids!) I highly recommend this cookbook to anyone, especially those who are trying to control their blood sugar.
