About the Author

Kazuko Masui is the author of many books on food and her vision for a comprehensive work on French cheeses goes back to 1980. Co-author Tomoko Yamada has spent the last 25 years studying French cuisine in both France and Tokyo. Yohei Maruyama has won many awards in his native Japan for his outstanding photography, in particular those featured in his two books The Best of Sushi and The Taste of Paris. Joel Robuchon, until recently, ran one of the most prestigious restaurants in Paris. He is considered by some to be the greatest chef alive today. Randolph Hodgson is a founder of the British Specialist Cheesemakers' Association and owner of Neal's Yard Dairy in Covent Garden, London. Robert, Freddy and Isabelle Vifian run the Tan Dinh restaurant in Paris. Connoisseurs of both cheese and wine, their wine list ranks among the top five in France.
