If I could only consult one cookbook, it would have to be Betty Goes Vegan by Dan and Annie Shannon! It has every kind of recipe you could possibly need, whether it be a fancy dish to impress your dinner guests or just some simple, delicious comfort food for a night in. My favorite part about this particular cookbook is that it takes traditional recipes we all know and love and adapts them to fit the needs of someone living a vegan lifestyle, so you don't have to sacrifice any of your favorite dishes from your pre-vegan days!

If you choose to own only one cookbook, I recommend owning Betty Goes Vegan. Annie and Dan Shannon have compiled a thick volume of recipes that will delight herbivores and omnivores alike. About the Author

Dan and Annie Shannon live in Brooklyn, NY. Annie has worked at the animal advocacy organization In Defense of Animals and as the Fashion Industry Liaison for the Humane Society of the United States. She does most of the cooking.

Dan was previously the Director of Youth Outreach & Campaigns for PETA and is now a Senior Strategist for the social movement strategy consulting company Purpose. He does the dishes.

My family loves this book. It has all the classics that we love in a way we can enjoy them. While it somewhat easy to convert most recipes into vegan, this book just has it all laid out really simply. Love it!!!
