About the Author

GEORGE GREENSTEIN is a third-generation professional baker, now retired. For twenty years he owned and operated a Jewish bakery, The Cheesecake King, on Long Island. He lives in Monroe Township, New Jersey. This is his second book.

Mr. Greeinstein makes trying new recipes as exciting as eating the delicious results. Recipes are concise, approximately a recipe a page, but there is plenty of advice on technique and problem-solving in the initial chapters if you have questions about what you're doing. The book includes sponge, sourdough, and straight yeast-based bread, so you don't have to commit to a week-long project to make an exciting rye. I especially recommend the potato bread and the potato, caraway, and rye bread recipes. Both make two loaves each, and both will disappear quickly, because they are delicious, moist, and did I mention delicious?
