The book is perfect for long-time vegetarians or beginners, complete with introductory information on the benefits of vegetarianism, terms and defintions of ingredients often used in vegetarian cooking, menus that present balanced meals, and recipes that are logically organized, usable, (meaning you'd actually want to eat them),easy to accomplish, and delicious. Many of our non-vegetarian friends are amazed at the dishes we present from the recipes in this book. I wish the publishers would go further and produce an annual compilation of the recipes in the VEGETARIAN TIMES magazine.
