If you are interested in the way cooking develops in a culture, you must read Waverly Root. He makes the fascinating decision to divide the main cooking styles of France according to the *fat* that is predominantly used: olive oil, goose fat, butter and lard. This is a wonderful way to study cooking - each fat is a product of the agricultural choices that are dictated by geography.

In addition to the information about French cooking, I found this approach informing the choices I make when I cook, particularly when experimenting without a recipe, or modifying a recipe. "What if, instead of olive oil, I use goose fat here? How will that change the flavor, the texture and the ingredients I choose to include?"

Simply an absorbing, informative and thought-provoking tour of French cooking.
