Mark Bittman loves food. He also loves good health and believes in environmental responsibility. This book is more a lifestyle book than a diet book. I have always been a believer in balance and I feel that Mr. Brittman has done just that by showing us how to modify our diets to 1) incorporate the correct ratio of plant based foods into our diets, and 2) be aware of our actions on the environment when we consume large amounts of animal products and processed foods. While many cannot commit to a complete vegan diet, most can do a part-time vegan diet, making this diet reachable for everyone. Mr. Britman has incorporated many delicious recipes and meal plans, but the diet is so simple you can easily do it without them. That is what makes this book so great. It is EASY. In one week I have already lost weight and I feel better.
