She offers dishes — braised fingerlings with rosemary and mellow garlic; sauted carrots with warm olive and mint dressing; stir-fried swiss chard with pine nuts and balsamic butter; and grill-roasted bell peppers with goat cheese and cherry tomato dressing — with layers of complexity that heighten but don't overwhelm the flavors of the intended stars, the vegetables. And she employs interesting contrasts — savory and sweet, for example — in recipes such as vanilla and cardamom glazed acorn squash rings; roasted turnips and pears with rosemary-honey drizzle; and gingery sweet potato and apple saute with toasted almonds that are likely to tempt even the vegetable-averse. I love this veggie cookbook! I've tried about a dozen recipes so far and only one of them was one that I wouldn't make again. I have no qualms about altering ingredients, either, so the Roasted Turnips and Pears with Rosemary Honey Drizzle now has rutabagas instead of turnips; I've taught many people the joys of rutabagas with this recipe! Kale with Maple, Ginger, and Bacon is crave worthy. Corn Sauté with Chile and Lime is a perfect summer food and the Quick Roasted Cauliflower with Zesty Orange-Olive Dressing makes a bland winter meal feel delightful. My absolute favorite recipe is the Summer Vegetable and Tomato Tian, which is reason alone to buy this book. In sum, if you spend way too much time ogling veggies at the farmers market and wondering what to do with all of that lovely produce, then this book is clearly meant for you! Btw, I am now buying my fifth gift copy of this book to give to yet another vegetable lover who is short on tasty recipes -- it is truly vegetable bliss!
