About the Author: My Italian mother cooked Neapolitan and Roman style dishes but I longed to find out what my Irish and German friends had for dinner. At just 14 I loved to cook for my brother, Anthony, who loved to eat. His praise encouraged me to experiment with other recipes. After marrying I learned about Sicilian cooking. My unsatisfied curiousity directed me to explore recipes of Europe, Asia, South America and the Middle East. I wanted to savor the foods of California, Mexico, Tennessee, Georgia and Louisiana and read a tale about what the regional people farmed and cooked in their kitchen. Fascinated by diverse yet similar foods such as ravioli, pierogies and wontons and always astonished at how the humblest ingredients can build a fantastic tasting soup or dessert inspires my taste buds to want to try more. The bounty of these cuisines is shared in Amelia's Kitchen Mangiare a Casa in the hearty garlic dishes, nourishing soups, healthy greens, versatile pastas, aromatic meats, subtle poultry, delicate fish, baked breads, stuffed vegetables and scrumptous desserts. The size of your kitchen is not important. You only need to have a passion to cook and a love of good food. I am happiest when creating a new meal and placing it on the table to share with my family. It gives me the greatest satisfaction to see the pleasure on their faces as they enjoy the food I prepared. I encourage you to cook boldly and acquire confidence in a few basic techniques. Cook in a relaxed and joyful mood and eat in the comfort of your home more often because the rewards are remarkably endless.
