Actually it isn't just a cookbook. It's a primer of cooking with extremely low fat methods. It isn't just for those seeking a low fat diet or cutting back on fat but also for those who wish to learn different methods of cooking and learn a bit more about cooking period. The recipes are excellent. Dean Ornish is big on taste and some of the best chefs in the country contributed to this because they were challenged to cook low fat and make it taste as good as high fat. My copy is getting very worn.
