Charney's book is excellent. I have made quite a few recipes from it and each is a five star. His Dark meat Seitan and his Light meat seitan are both very good and very easy plus they are extremely easy to modify. He also teaches about the ingredients on the pages making it easier for you to modify to your taste and to better understand and seek recipes that will suit you.
