Bittman does it all, vegetarian style. I respect him immensely for his writing on health, food politics, and food justice in The New York Times, but he first earned his chops for his recipes. This immense cookbook explains the role of different ingredients, breaks down cooking techniques, and offers thousands of recipes, many of which are quick but delicious. Perfect for any cook, especially those leaning toward a meat-free or reduced meat diet.

I wanted to find more recipes that incorporated and highlighted vegetables that my family would enjoy. Despite the very high recommendations, Deborah Madison's book didn't do much for us. I loved Bittman's How to Cook Everything, though, so I thought I'd try this. Bingo. Great options for vegans are included throughout the book, and several variations are given on many of the recipes. Easy to follow, lots of suggestions and tips, and great ideas for meal planning abound. His encouraging tone has me trying things I would not have thought about prior to his coaxing. Highly recommended!

There are multiple recipes for every vegetable I know in this cookbook, with many variations and substitutions for creative cooks. The recipes are clearly written, with easily accessible ingredients. I reach for it all the time!

We will never have to buy another cookbook. Mark Bittman has written a cookbook that guides, not governs, your cooking. The recipes are concise and uncomplicated, with many, many variations. It's the variations, and the friendly, though professional, prose that make this book a winner. We haven't made a recipe yet that has been a flop, and we are not experienced cooks.
