Chef Jamie gave the recipes without the un-necessary fat. The best 'core recipes' to jump and create one's own preferred additions. All in moderation. The chicken and dumplings is better than ANY Southern recipe ever found and prepared! The dumplings are Perfect Every Time. Astonished. No one can quibble about these fantastic recipes. Worth to be in every cook/baker's books of foods.Simply put in a word-Brilliant!

At last, a book for those of us who are lazy and end up with take-out because we don't want to be gourmet cooks. His ideas make sense to us right brain people who aren't comfortable just adding a dab of this and a dab of that to make something taste great. Thank you, Jamie.
