Italian Classics is a cookbook I'm thrilled to have in my kitchen. Not only are the recipes mouthwatering, they're also informative and well-researched. Cook's Illustrated's test kitchens have done considerable investigatory prep-work and their results are included at the introduction of each recipe. Cooking methods and ingredients are well-supported and concisely presented, making it easy to pick up tips that I normally wouldn't seek on my own. The book is also well organized and includes illustrations, photos, and of course a handy index. Especially tasty are the risotto cakes — a fantastic use of otherwise not-too-appealing leftovers, made easily and absolutely scrumptious with a little egg, oil, bread crumbs, and fontina. This book is a treat to peruse, and even better as a guide to divine dining.
