Devoted solely to the Specific Carbohydrate Diet, one of the hottest trends in nutritional therapy
The Specific Carbohydrate Diet (SCD) is a strict grain-free, lactose-free, and sucrose-free dietary regimen intended for those suffering from Crohn's disease and ulcerative colitis (both forms of IBD), celiac disease, IBS, cystic fibrosis, chronic diarrhea, candidiasis, and autism.
The Specific Carbohydrate Diet is based on the work of Elaine Gottschal, who wrote a groundbreaking book called Breaking the Vicious Cycle, In an effort to heal her daughters Crohns disease, Gottschal researched the role of intestinal microbes in the disease, and discovered research done for celiac disease that explained the importance of eliminating certain carbohydrates from the diet. By eliminating these carbohydrates, you can reduce the toxins produced by intestinal microbes and the corresponding mucus production that contributes -- and even causes -- digestive ailments like Crohns, IBS, and celiac disease. Whats more, this diet has been used to cure autism, and many parents are turning to the SCD to help their children with developmental disorders.
The Specific Carbohydrate Diet consists primarily of foods that early man ate before agriculture began -- meat, fish, eggs, vegetables, nuts, and low-sugar fruits. Recipes in this book include a wide variety of foods and ingredients: spicy eggs, apple pancakes, chicken tarragon and tandoori chicken, meatballs, pork chops with apples, garlic shrimp, salmon with tangy sauce, Indian eggplant, Portobello pizza, coconut pudding, gingerbread cookies, and pecan nut muffins, among others.

About the Author
Raman Prasad was first diagnosed with ulcerative colitis at the age of seventeen. His health steadily deteriorated in the years that followed, resulting in several hospital stays and various health complications. It was during this time that he came across Elaine Gottschall's book, Breaking the Vicious Cycle, which outlined the Specific Carbohydrate Diet (SCD) and the science behind it for putting inflammatory bowel disease (IBD), celiac disease, and diverticulitis in remission. Raman has followed the SCD successfully for more than ten years, which has resulted in a happy return to good health and a normal life. Inspired by his recovery, he established www.scdrecipe.com in 1998, which includes over 500 SCD recipes and other relevant information about the diet. Prasad is also the author of the self-published memoir Colitis and Me: A Story of Recovery and the SCD cookbook Adventures in the Family Kitchen, which combines traditional Italian-American and Indian family recipes.
