About the Author
Victoria Wise was the chef of Northern California's acclaimed Chez Panisse restaurant prior to starting her own charcuterie. A former food columnist with The Los Angeles Times, she is also the author of several cookbooks, including The Well-Filled Tortilla and Mexican Cooking.
