This fantastic cheese-making cookbook from Portland's own indie crafter is so easy to use it's almost hard to believe. Almost. I've made yummy cheese from the step-by-step photo recipes in it several times now, thanks to Claudia's simple, encouraging instructions. This book boasts 16 varieties of fun cheese recipes to try, all in one hour or under. There's an assortment of cheese accompanying recipes in the back as well. I can't emphasize enough how much helpful knowledge Kate Payne has packed into this book. You expect tips, hints, and the basics of cooking, which you get. But there is also nutritional information (which the kids will need after they get tired of living on Cheetos and beer during the first few months of being on their own). My favorite chapter: "Methodology and Mad Skills: Learning How to Cook without Books or Your Laptop." Recommended by Tracey T., Powells.com
