Publisher Comments

From the author of more than 10 cookbooks comes this comprehensive guide and collection of recipes using root vegetables. Discover the fascinating history and lore of 29 major roots, their nutritional content, how to buy and store them, and much more, from the familiar (beets, carrots, potatoes) to the unfamiliar (jicama, salsify, malanga) to the practically unheard of (cassava, galangal, crosnes). The best part? More than 225 recipes — salads, soups, side dishes, main courses, drinks, and desserts — that bring out the earthy goodness of each and every one of these intriguing vegetables. From Andean tubers and burdock to yams and yuca, this essential culinary encyclopedia lets dedicated home cooks achieve a new level of taste and sophistication in their everyday cooking.

Review

"Diane Morgan has written a masterful book about root vegetables." Deborah Madison, author of Vegetarian Cooking for Everyone

Review

"[O]ne of my favorite things about this book...Diane shows root vegetables more commonly used in Asian, Indian, and Latin American cooking and teaches through the recipes how good they can taste." Thekitchn.com

Review

"Diane Morgan set out to write a reference book for root vegetables, the familiar and not so familiar. The lady is an over-achiever. Roots: The Definitive Compendium with more than 225 Recipes will guide you from the much loved potato to vegetables familiar only to serious cooks like burdock root, galangal and malanga. She introduces root vegetables that would make my vegetable peeler cower in fear." Penandfork.com

Review

"I had never given root vegetables much thought, but after reading through numerous sections I soon wondered how I had gone without this book for so long." Huffington Post

Very nicely done. There are so many opportunities to find great roots from the farmers markets, and this book helped me to identify and prepare these great roots.
