Jeff D. Leach is a PhD candidate at the University of Leicester who heads an active research program and has published more than 50 peer-review articles. He has delivered more than 75 papers at national and international conferences and is a member of the International Scientific Association for Probiotics and Prebiotics. He lives in Silver City, New Mexico. Glenn R. Gibson is a professor of food microbiology at the University of Reading and the deputy head of the School of Food Microbial Sciences research unit. He has coauthored more than 250 research articles, runs more than 20 externally funded research projects, and is vice president and a founding member of the International Scientific Association for Probiotics and Prebiotics. Jan Van Loo works as a product developer and nutritionist for a food ingredient innovator, Orafti.
