Excerpt from Town Swamps and Social Bridges: The Sequel of a Glance at the Homes of the Thousands
As regards the London supply of milk, time was when the Slow ness and difficulty of conveyance rendered it necessary that the dairies should be either in the metropolis or in the immediate suburbs but the means of transit are now changed, and for fifty miles round this great city the cows can be milked at early morn, the milk brought by swift trains to town, and delivered at our doors in time for breakfast. It must be admitted that several of the London dairies, where capital is not wanting, are managed as well as the circumstances will admit of but at best, the keeping of such animals in the midst of a huge population is bad, and should be discontinued.
