This was my very first cookbook. My girlfriend Dee gave it to me in 1972 in paperback form. James Beard goes into detail on every aspect of cooking. He educates the reader in a very entertaining way the basic fundimentals needed to become a good cook. I learned how to cook every type of vegetable, how to choose cuts of beef, pork, lamb, and just about any know edible animal in these pages. it is a good read and has basic delicious recipes for both the beginner and advanced cook. I purchased this for myself in hardback form in the early 1990's. I gave that copy to my daughter last year because she enjoys cooking for her husband, and while learning to cook through the years, knew this was the "Go To" book for answers to just about any cooking related question. Now I am having trouble finding this in hardcover form, but know I will find it eventually at Powells as I did in the 1990's in Tigard.
