This cookbook is the one that guided my generation, the Talented, Languid Generation. Ms Corbitt happily taught us how to have, with little effort, a souffle at hand, poppy seed dressing, fancified crab, hollandaise sause--the essentials--without fretting or talking anxiously about food preparation. We still love her orange book and are passing it to the Frenzied Generations, who will doubtless substitute fake something for butter and heavy cream but will enjoy their meals and snacks, many snacks, despite themselves. Hers is an unselfconscious, easy hedonism, lived before culinary delights became pornography or medical concerns. We knew how to say "Bon appetit," but we didn't have to.
