For eaters who truly care about where their food is coming from and the labor of love involved in getting it on your plate. Good food takes time and a skilled hand, but the appreciation of this process is quickly becoming the exception. This is, without a doubt, my favorite resource for all things baking. The book has been produced, like every one out of America's Test Kitchen, with rigorous testing and attention to detail. With every recipe, the home baker is rewarded with pages of back story about how the cooks arrived at the given recipe. There is ample discussion about where a given recipe can go wrong, what to do to avoid it, and variations that one might enjoy. I am a huge fan of Cooks Illustrated and America's Test Kitchen and firmly believe that this is the best of their products. Whether you're making cupcakes for a birthday party or perfecting your artisan bread baking, this books has it all.
