Describe your latest book/project/work. Land of Milk and Honey is about the search for pleasure at the end of the world. A smog has descended and killed all food crops when an American chef is lured to a secret colony of the wealthy at the border of Italy. It’s the story of how one woman comes alive again to food, to her body, to her own source...

Synopses & Reviews

Synopsis

A marriage between two unlikely characters--wood-fired food and well-chosen wines--brought to you by the real-life marriage of a pitmaster and a sommelier. This cookbook brings smoky goodness from the grill and pairs it with wines from the Pacific Northwest.

Every region has its barbecue, grill, and smoking food traditions. Now the Pacific Northwest can claim its place at the table with these recipes developed by sommelier Mary Cressler and pitmaster Sean Martin from Portland, Oregon. And true to the region, these recipes pair with wines such as pinot noir and cabernet sauvignon instead of the customary can of beer. Not as sauce-dependent as Kansas City, not quite as beef-obsessed as Texas, these dishes bring the smoke to wild salmon, ribs and steaks, fresh apples, heirloom tomatoes, nuts and beans, and even chocolate pot de cr me. Rubs and glazes draw on Northwest flavors such as soy sauce, rosemary, and wild blackberries. Whether the equipment at home is a basic kettle grill or a professional-grade outfit with an electric wood feeder, the instructions will turn even novices into masters of the grill.

This cookbook has a great amount of information for both pairing wines with grilled and smoked foods as well as recipes from the simple to the more advanced that any backyard chef would be able to do. The opening chapter talks about technique and how to smoke or grill the recipes on something as simple as a kettle grill. The wine details are a nice addition, but you do not need to know or like wine to appreciate the book. The recipes span from all the various proteins like fish (big fan), lamb, and beef, to fun sides and a chapter on vegetables which I especially appreciate. Overall it's a great book that is going to entertain the beginner and the more advanced backyard cook! (plus some really awesome photos)
