En la actualidad, la ciencia de la nutrici n ha evolucionado a partir de conceptos cl sicos (suficiencia nutricional b sica) hacia los conceptos de nutrici n "positiva" u " ptima"; centr ndose las investigaciones en la identificaci n de componentes biol gicamente activos. En nuestra sociedad se producen con cierta frecuencia estados hipercatab licos, como son los casos de enfermos politraum ticos, quemados, enfermos de c ncer o enfermedades relacionadas con el envejecimiento, etc., todos ellos asociados a un estado general de mal nutrici n. Se sabe que la ingesta de prote nas de alta calidad, sustancias antioxidantes y cidos grasos poliinsaturados de las series omega-3 y omega-6, contribuyen positivamente a la mejora de los pacientes en estados hipercatab licos. Dichos principios se encuentran en la composici n de los crust ceos. Estas premisas nos han llevado a plantearnos la posibilidad de obtener un alimento funcional a partir del cangrejo rojo (Procambarus clarkii)el cual pudiera ser til para el tratamiento nutricional y mejora de los estados hipercatab licos.
