Make Tiramisù
3 eggs, separated
3 tbsp sugar
1 cup 1/2lb/250g mascarpone
1tbsp grated lemon zest
6. oz/200 g ladyfingers
4 tbsp strong espresso
2 tbsp cocoa powder

Beat half of the sugar with the egg whites until stiff peaks form. Beat the remaining sugar with the egg yolks until creamy
Add mascarpone and lemon zest to the egg yolks and stir well.
Carefully fold in the beaten egg whites
Soak the ladyfingers in the espresso.
Cover the base of the rectangular baking dish with the soaked ladyfingers. Spread half of the mascarpone evenly over it. Repeat the process. Chill the tiramisù for at least 4 hours.
Sprinkle with cocoa powder before serving.
