This delectable collection of 120 recipes from Fresco by Scotto¨, a popular Tuscan-style
restaurant in New York, features healthy, uncomplicated dishes using the freshest produce
of each season, along with inspiring photographs of the food and its ingredients.
When it opened several years ago, Fresco by Scotto¨ was an instant hit in a city of
outstanding Italian restaurants. The key to its success was a menu offering delicious,
unpretentious seasonal specialties and a welcoming family atmosphere. In this handsomely
illustrated book, the Scotto family and Chef Vincent Scotto (who is not a relative)
share the secrets of their much-admired recipes with the home cook. They provide an
innovative array of antipasti; pasta mixed with seasonal vegetables or fresh seafood;
risotto paired with wild mushrooms or garlic sausage; grilled or roasted meats, poultry,
and fish; crispy pizzas overflowing with vegetables; memorable desserts, and much more.
All of the recipes have been carefully tested for preparation at home and include shopping
tips and substitution suggestions. Many are quick and easy to serve, and even those that
require a little more time are not difficult to make. For those who love northern Italian
food and enjoy using the freshest local ingredients, this cookbook is indispensable.
Marion Scotto, with her children, Rosanna Elaina, and Anthony, Jr., own and operate Fresco
by Scotto¨. Chef Vincent Scotto was formerly at Al Forno in Rhode Island. Marion Scotto
was the coordinator of special events for the Borough of Brooklyn; Rosanna Scotto is a
television co-anchor for the evening news Fox Five; Anthony Scotto, Jr., previously managed
several restaurants in California; and Elaina Scotto has worked as a public relations director.
